Za'atar Roasted Salmon
5 kg/ 11 lb wild-caught salmon filets, cut into 100g/ 3 oz pieces
1/2 cup za’atar
1/4 cup Himalayan sea salt
2 Tbsp black pepper
1/2 cup extra virgin olive oil
Method: Preheat oven to 400-degrees.
Line 4 sheet pans with parchment paper.
Lay the salmon pieces on the prepared pan.
Sprinkle each piece with za’atar, salt and pepper.
Drizzle each piece with some of the olive oil.
Roast until opaque - about 15 minutes, depending upon thickness of fish.
