2 kg red cabbage, thinly sliced
1 kg beets, peeled and thinly sliced
2 medium onions, peeled and thinly sliced
2 340g bags cranberries
3 medium oranges, diced (peel and all)
1/4 cup pink salt
Method: Put it all in the bin and massage it like you mean it.
Massage it for 20-30 minutes. It will soften and release juice.
Pack it into a big clean glass jar (Need to have only 1/2-1” free space at top)
Add water so that liquid covers top and all veg is submersed.
Put on lid and set aside on counter for 2 weeks.
Every morning and night open the lid to “burp” the jar.
After a few days you’ll see (and hear) it bubbling as it ferments.
