Sweet Potato Puree

Ingredients:

15 lbs sweet potato, washed and cut into 2” cubes (no need to peel)

1 cup ghee

2 cans full fat coconut milk

Himalayan sea salt, to taste

Ground black pepper, to taste

Method:

Fill large stock pot with chopped sweet potato to within 4”of the top.

Fill pot with water to cover sweet potato.

Set pot over high heat and bring to a boil.

Lower heat just to keep the water boiling.

Cook until soft-fork should insert very easily.

Remove from heat.

Strain water away.

Add coconut milk and ghee to sweet potato in the pot.

Using a hand blender, puree until smooth.

Add salt and pepper to taste, using the hand blender to combine thoroughly.
