Strawberry Chia Jam

Most jam, whether made at home, or purchased at the store, has just as much sugar as it does fruit.

This recipes uses no sugar and it is thickened using chia seeds, which add fiber, protein, and healthy fats.

Enjoy it spread on toast or pancakes or stir it into yogurt or chia pudding. 


6 cups chopped frozen or fresh strawberries

5 Tbsp chia seeds

1 tsp pure vanilla extract

1/2 tsp pure almond extract

pinch of salt


In a medium saucepan, stir together the berries and chia seeds until combined. Bring to a simmer and reduce heat to medium-low. Simmer, uncovered, for 10-15 minutes, stirring frequently, until the berries break down and the mixture begins to thicken, reducing down to about 2 cups. Remove from heat and stir in the vanilla and almond extracts. Transfer the mixture to a glass jar and let cool.
