Plain Cauliflower Rice


1 medium head of cauliflower, core removed and cut into quarters

1 medium onion, diced

1 clove garlic, minced

2 Tbsp ghee or coconut oil

1/2 tsp salt

1/4 tsp ground black pepper

Method: Using a box grater or food processor, grate the cauliflower -just like you’d grate carrots for carrot cake.

Heat ghee/oil, over medium heat, in large frypan. Add onions, garlic and grated cauliflower. Stir-fry until cauliflower is cooked “al-dente”. Stir in salt and pepper.
