Oven Roasted Salmon with Creamy Lemon Butter Sauce

Salmon Ingredients:

2 lbs salmon filet

1/4 cup extra virgin olive oil

1/2 tsp black pepper

2 tsp coarse Himalayan sea salt

Method: Preheat oven to 400 degrees. Line a sheet pan with parchment paper.

Drizzle 2 Tbsp olive oil on parchment paper. Lay salmon on top. Drizzle fish with remaining 2 Tbsp olive oil. Sprinkle evenly with salt and pepper.

Roast, uncovered, on center rack of oven, until fish is opaque in the middle - approximately 30 minutes.

Remove from oven, cover and set aside while preparing the butter sauce.

Sauce Ingredients:

2 Tbsp finely minced white or yellow onion

1/3 cup freshly squeezed lemon juice

2 Tbsp water

1 Tbsp honey

3/4 cup butter, cubed

1/2 tsp dried dill

1/2 tsp fine Himalayan sea salt

pinch of black pepper

1 tsp lemon zest

Method: Mix onion, lemon juice, water and honey in a small saucepan. Bring to a simmer and cook until onion is soft and translucent.

Whisk in butter, one cube at a time. Add dill, salt and pepper and lemon zest. Stir to combine.

To serve: Plate salmon as desired and top with sauce.
