Oven-Roasted Mixed Stir-Fry Vegetables
1 clove garlic, peeled and minced
1 onion, peeled and chopped
1/2 head broccoli, chopped stems and florets
2 carrots, peeled and sliced on the diagonal
1/4 of a small green cabbage, cored and thinly sliced
1/4 of a small red/purple cabbage, cored and thinly sliced
1 225-g box of mushrooms, halved
1/2 cup olive oil
2 Tbsp dried Italian seasoning
1 tsp fine Himalayan Sea Salt
1/2 tsp ground black pepper
Method: Preheat oven to 400-degrees.
Toss everything together in a large roasting pan. Cook until fork tender and edges golden brown (approximately 20 minutes).
