Mushroom Gravy


2 Tbsp ghee or coconut oil

225 g white or cremini mushrooms, sliced

1 medium white or yellow onion, diced

1 -2 cups warm beef, chicken or vegetable stock

Drippings from 1 roasted chicken, beef or pork roast 

Salt and pepper to taste

Method: Set medium skillet over medium heat. Add ghee or oil. When fat is hot, add mushrooms and onions. Sauté mushrooms and onion until they are soft. 

Transfer mushrooms and onion mixture to blender jar or bowl of food processor. Add 1 cup of stock and drippings. Blend until smooth, adding more of the remaining stock until desired thickness is achieved.  Add salt and pepper to taste. Serve with roasted meat.
