Mixed Root Vegetable Puree

8 cups mixed root vegetables, peeled and chopped (carrot, turnip, parsnip

1 onion, peeled and chopped

1/4 cup ghee

1/2-1 cup full fat coconut milk

1 tsp salt

1/2 tsp ground black pepper

1/4 tsp grated nutmeg (optional)

Place all vegetable in a large pot. Cover with water. Place on burner set on high heat and bring to a boil. Reduce heat and simmer until all vegetables are fork tender - approximately 10 minutes. Remove from heat and drain.

Add ghee and coconut milk to pot. Using hand/stick blender, puree until smooth. Add salt, pepper and nutmeg and blend to combine.

Makes 4 servings.
