Celery seed is the little bit of magic in this recipe. In naturopathic medicine, it’s known for its beneficial anti-anxiety and anti-inflammatory effects as well as for being a diuretic. Both celery seed and cabbage are sources of Manganese - a mineral which helps form an enzyme that functions as a powerful antioxidant!!
This “stuff” is about as basic as you can get, and yet it really is something that ought to be a staple in the diet of anyone looking to bolster their microbiome and mitochondria due to the fibre and sulphur compounds found in the vegetables.
Cabbage, onions, garlic and celery seed are all gently cooked down in ghee. It pairs great with just about any protein, for any meal. You can add grated carrots or small cauliflower or broccoli florets to the mix, as well, to change it up a bit each time you make it.

1 small head green cabbage (Savoy and nappa work too!), cored and thinly sliced
1/2 head red/purple cabbage, cored and thinly sliced
4 stalks of celery, chopped (chop and reserve the green leafy tops, set aside)
1 large red onion, peeled and sliced
3 cloves garlic, peeled and minced
1/4 cup ghee (or coconut oil)
2 Tbsp celery seed
2 tsp fine Himalayan sea salt
1/2 tsp ground black pepper
Method: Place a large skillet over medium heat. Add the ghee and allow it to melt. Add the cabbages, celery stalks, onions and garlic and cook, uncovered, stirring often, until all is fork-tender. Remove from heat and stir in the reserved leafy celery tops, celery seed, salt and pepper.
