1 lb ground beef, veal or pork
1 small onion, finely diced
1 tsp fine sea salt
1/2 tsp ground pepper
1 heaping Tbsp Herbs de Provence or Italian Seasoning herb blend
Method: Preheat oven to 400-degrees. If making meatballs, line a sheet pan with parchment paper. Set aside.
Place meat in a medium bowl. Add onion and seasonings. Use hands to work onion and seasoning evenly through the meat.
Using hands, gently push meat mixture into each of 5 muffin cups or form into 15 golf ball-sized meatballs and place on prepared sheet pan.
