Macadamia Nut Cream Cheese

Macadamia nuts are creamy and sweet and delicious.

They are VERY high in Omega-9 (oleic acid) monounsaturated fat. Studies are suggesting that Omega-9 fats may boost your mood and energy levels, so a handful every now and again isn’t such a bad idea.

These super high fat nuts also contain thiamine (a.k.a Vitamin B1) which enables the body to use carbohydrates as energy. It is essential for glucose metabolism and it plays a key role in nerve, muscle, and heart function.

Like other B-complex vitamins, thiamine is sometimes called an “anti-stress” vitamin because it may strengthen the immune system and improve the body’s ability to withstand stressful conditions.

This cream “cheese” is terrific in wraps or spread on flatbread toast triangles. It’s even good in omelettes!!


2 cups raw macadamia nuts

2 cups water

2 Tbsp coconut oil

3 90 Billion CFU probiotic capsules



zest of 1 lemon

clove garlic, peeled & grated

nut milk bag


food processor or blender

Method: Place nuts, coconut oil and 2 cups of water in the blender or food processor

Blend until super-creamy (took a few minutes in a Vita-Mix)

Open probiotic capsules, add to nuts. Process to blend well.

Pour mixture into nut milk bag.

Twist the top of the bag and place into strainer.

Place heavy bowls/random dishes on top to press down cheese

Allow to sit in a warm, dry location for 24 hours

Remove from bag and turn into a small clean bowl. Stir in salt, pepper to taste along with the garlic and lemon rind. Cove and place in fridge until chilled.
