Grain Free Granola

Ingredients:

1 cup raw pecans

1 cup raw macadamia nuts


1 cup raw walnuts

1/2 cup almond flour

1/2 cup coconut flour


2 cups unsweetened shredded coconut


1/2 cup raw, shelled pumpkin seeds 


1/4 cup sesame seed 


1/4 cup hemp seed 


1/4 cup ground chia seed 


2 Tbsp ground flax seed 


2 tsp fine Himalayan sea salt 


2 tsp ground cinnamon 


1 tsp ground cardamom 


1/4 - 1/2 tsp ground cloves

3/4 cup melted ghee or coconut oil


1/2 cup maple syrup 


2 tsp vanilla extract

1/2 tsp almond extract, optional

Method: 

Preheat oven to 300 degrees F. Line a cookie sheet with parchment paper. Set aside.

Place pecans, brazil nuts and walnuts into bowl of food processor and blend until some are ground into flour, but many medium and large chunks remain.

Pour nuts into a large bowl and add all other dry ingredients. Stir together well.

Stir melted ghee/coconut oil, maple syrup and vanilla together. Pour into the dry ingredients and mix thoroughly.

Spread mixture evenly onto prepared pan, pressing down firmly.

Bake until golden brown - 20-30 minutes  - turning the pan around halfway through. DO NOT STIR OR TURN OVER!

Remove from oven and let mixture sit in pan to cool completely, undisturbed.

Break into chunks and store in airtight container or zip-lock bag.
