Fried Plantain Chips
2 green/pale yellow plantains, peeled and sliced crosswise into 1/4” thick “coins”
1/4 cup ghee or coconut oil
fine Himalayan sea salt and pepper, to taste
Place a large skillet over medium heat. Add the ghee or coconut oil and allow it to melt.
Lay the plantain slices flat in the hot oil and allow to cook until golden brown. Flip the slices and brown on the other side.
Remove fried plantains from pan and place on plate or serving platter. Salt and pepper to taste.
