Filet of Haddock with Orange and Herbs


5 kg/11 lb wild-caught haddock filets, cut into 100g/3 oz pieces

1/2 cup extra virgin olive oil

6 large oranges, each thinly sliced into 8 slices

1/2 cup dried Italian seasoning

1/4 cup Himalayan sea salt

2 Tbsp ground black pepper

Method: Preheat oven to 400-degrees.

Line 4 sheet pans with parchment paper.

Place fish portions on prepared pans.

Sprinkle each portion of fish with salt and pepper.

Drizzle each portion of fish with olive oil.

Top each portion of fish with a slice of orange.

Bake until fish is opaque - about 15 minutes, depending upon thickness.
