Date and Orange Muffins
juice and zest from 2 oranges
2/3 cup melted ghee
2 tsp vanilla
2/3 cup full fat coconut milk
1 cup room temperature kefir or homemade almond milk
3 1/2 cups Keto-biome Baking Mix
2 cups chopped pitted dates
Method: Preheat oven to 350-degrees. Line 18 muffin cups with foil or paper liners. Set aside.
Place all muffin ingredients except the chopped dates in bowl of food processor and blend until well combined, stopping to scrape down sides.
Turn batter out into a large bowl and stir in the chopped dates.
Spoon the batter into the prepared muffin cups. Cups should be about 3/4 full.
Place muffin pan in oven on the center rack and back for 20-25 minutes, until golden brown and tester comes clean.
Remove pan from oven and allow muffins to cool for 10 minutes before transferring to baking rack to cool completely.
