Country Style Beef Stew
5.5 kg / 12 lb boneless beef stewing cubes
1 cup beef tallow, melted
5 lb carrot, sliced into 1/4” thick “coins”
2 heads celery, sliced into 1/4” thick “coins”
5 lb rutabaga/turnip
6 large onions, sliced
1.5 litre (48 fl oz) beef stock/bone broth
1/2 litre (16 fl oz) red wine
Method: Preheat oven to 300-degrees.
Combine all ingredients in large roasting pan. Cover with foil and cook until meat pulls apart easily with fork (about 3 hours). Check periodically to ensure enough liquid remains to fill half the roasting pan. Add water if necessary.
