Coffee Braised Beef Roast
1 4-lb grass-fed beef brisket or blade roast
2-3 Tbsp coarse sea salt
1-2 Tbsp ground black pepper
1/4 cup grass-fed beef tallow or coconut oil
2 cups bone broth
1 cup strong freshly-brewed espresso
1 large onion, sliced
Method: Preheat oven to 325-degrees.
Liberally salt and pepper all sides of meat. If using a brisket, cut in half.
Heat tallow or coconut oil over VERY high heat in a large skillet. Add meat and cook (sear) until golden brown on both sides. Transfer to large shallow roasting pan.
Pour bone broth and coffee over meat. Top with sliced onion.
Cover pan and roast meat 2 1/2 hours.
Remove from oven and let cool.
Slice thinly across the grain and return to pan with braising juices. Turn to coat all slices of meat with juices.
To serve:Reheat meat in oven or skillet with the juices.
