Big Ass Salad
Some things just need to be eaten on the regular, and a Big Ass Salad is one such item.
The veggies in this salad all help contribute to the health of a robust microbiome.
The onions and jerusalem artochokes are all great sources of inulin.
Radishes have arabinogalactans.
115 g spring mix
45 g raw broccoli florets
45 g raw cauliflower florets
60 g raw red cabbage, thinly sliced
7 g raw onion, minced
1/2 clove garlic, minced
60 g cucumber, diced (washed but NOT peeled)
45 g raw red peppers, diced
45 g cherry tomatos, quartered
15 g radish, sliced
15 g sliced jerusalem artichoke, optional
2 Tbsp extra virgin olive oil, avocado oil or melted bacon grease
2 Tbsp white wine or balsamic vinegar
fine Himalayan sea salt and ground black pepper, to taste
Method: Toss all veggies together in a large glass bowl. Dress with oil and vinegar and season with salt and pepper, to taste.
